Strawberry and White Chocolate Marshmallows
This is an amazing recipe for kids, they love it and they can make it with you mom. I showed my sister's and brother's kids to make it and they loved it.
Ingredients:
- 150g Egg white
- 150g Casting sugar
- Pinch of salt
- 225g Glucose
- 30g Gelatin powder
- 100g Strawberries, finely cubed
- 100g White chocolate, melted
Method:
Melt glucose and casting sugar in nonstick pan over medium heat, stir to incorporate sugar and stir, leave and don’t stir and leave to cook until thick syrup consistency forms. Meanwhile whisk egg whites with a pinch of salt till meringue consistency. While whisk is running slowly add glucose-sugar syrup and whisk until well incorporated. Dissolve gelatin in a little bit of water. Place in microwave for 30 seconds to melt completely. Slowly whisk in gelatin while machine is running until well incorporated. Last but not the least, whisk in strawberries and melted chocolate. Line baking tin with plastic, pour in marshmallow mixture and refrigerate for 4 hours. Lift plastic out and cut marshmallows
